Amazing Sweet Pickle Recipe
I have to share a simple, yet amazing recipe for sweet pickles with you that my mom shared with me and my family is crazy over. There are only a few ingredients needed so I will list them for you first.
- Large Jar of Whole Dill Pickles
- 2 C. Granulated Sugar
- 1 C. Apple Cider Vinegar
- 1/2 T. Celery Seed
Cut the pickles into 1/2″ chunks and set them aside. Poor half of the pickle juice into a large pot and add the 2 cups of sugar, 1 C apple cider vinegar and 1/2 T of celery seed. You will want to bring this to a boil and while you are waiting for it to start boiling put all the pickle chunks back into the original jar. I whisk the mixture to help the sugar dissolve and when it get to a boil then you turn it off and pour it over the pickles in the jar.
Store the pickles chunks in the refrigerator. They won’t be ready for 3-4 weeks. You can taste them in 3 weeks but we find that it’s typically 3.5-4 weeks before they taste sweet enough for us. You can help the process by tipping the jar upside down and right side up a coupe times while you wait. The longer they sit the better they seem to taste.
