Whenever I take these appetizers to a gathering they are obliterated. These low carb, keto friendly appetizers are a snap to make. I never have leftovers to take home, so make sure you don’t take all of them or you will be sad. These are so quick and easy to make and require only a few simple items to make.
Prepare your work area. I make mine on a large cutting board. You will need green onions, baby dills or spears, sliced ham, and room-temperature cream cheese. Trim up your green onions and whip the cream cheese so it is smooth and easier to spread on the ham. I take some baby dills out and lay them on a paper towel to absorb some moisture before rolling them up.
Simply layer a few ham slices over each other an inch or so, spread on some cream cheese, lay your green onion on one long edge of the ham and roll it up. Continue with the other green onions.
Then do the same with the small baby pickles laying them end to end along the long edge and rolling them up.
It is easier to transport them in this rolled-up state, so I put them in a gallon-size bag and keep them in the fridge. Then you slice them up and lay them out at the venue once you have arrived.
You can customize these meat and cheese roll ups anyway you would like. by changing up the deli meat, using whipped cream cheese, and even what you roll up inside of it. You could use bacon, roast beef, or turkey and add olives, jalapenos (if you like it spicy), cucumber, fresh spinach.

- 1 mixing bowl
- 1 knife or spatula
Ingredients
- 2 blocks cream cheese
- 1 bundle green onions
- 24 oz jar baby dill pickles
- 2 lb sliced ham
Instructions
- Prepare your work surface. I use a large cutting board but it's not required. Prepare your green onions and lay out some baby dills on a paper towel to absorb the moisture.
- Whip the cream cheese once it is at room temperature making it easier to spread.
- Lay out several slices of ham slightly overlapping and then spread on some cream cheese.
- Lay the green onion along the long side at the edge of the ham and roll it up. Continue with the other green onions.
- Do the same for the baby dills lining them up end to end along the edge of the ham.
- Keep in a refrigerator bag in the fridge. Slice them up when you arrive at your venue and enjoy. Don't expect any leftovers.
Notes
- You can also use dill spears but I prefer the baby dills because then you don’t have an issue with the juice.
- You can use regular or fat-free cream cheese.
- The ham can be tricky. Some slices are so thin they tear. As you saw in my images some have holes in them so I just overlap the holes.
