No Bake Blueberry Cream Cheese dessert cups

Need a dessert in a hurry? This one not only looks amazing and can be made in 15 minutes, but they are truly droolworthy!! These NO BAKE CREAM CHEESE DESSERT CUPS are delicious! They can also be created as gluten free desserts as well. For more information read below.

It only requires a few ingredients that most people have on hand already. I used blueberries, but you can swap that out for so many other things.

INGREDIENTS NEEDED

Graham crackers or graham cracker crumbs

You can purchase graham cracker crumbs that are ready to go or simply make your own from graham crackers. (See Pro Tips below for instructions). Also listed in the Pro Tips is a Gluten free alternative.

Granulated sugar

This is used to sweeten the crust and it my choice. You could also use brown sugar if you want a more toffee flavor.

Butter

The melted butter will be used in this recipe to help bind the graham cracker crumbs to form a nice crust for this dessert.

Cream Cheese

If you prefer you can use reduced fat or fat free cream cheese but I prefer regular just because it provides a richer taste. (Most importantly is the cream cheese being at room temperature).

Sweetened condensed milk

This will provide the creamy sweet flavor for this recipe. It creates a creamy texture and sweetness that gives this dessert the perfect consistency.

Vanilla extract The vanilla extract is used to enhance the flavors in the cream cheese.

Lemon Juice This serves two purposes for this recipe, it balances out the cheesy taste of the cream cheese while also working with the condensed milk to help create a thicker creamy consistency.

Blueberries This is the pièce de résistance. I love blueberry dessert which is why I chose it as the topping for this recipe. (See Pro Tips below for some other delicious alternatives)

HOW TO MAKE THESE DELICIOUS NO BAKE CHEESE CAKE CUPS

Start with the graham cracker crust. Pour 3/4 of a cup of graham cracker crumbs into a mixing bowl, then add in the 2 Tablespoons of granulated sugar, and 2 Tablespoons of melted butter.

Mix it all together until well combined and then use a teaspoon to add approx. 4 scoops into each of the 8 dishes. Press the crumbs down to make it like a pie crust.

CREAM CHEESE FILLING

Now is time to make the filling. Start off by whipping the softened cream cheese until it’s light and fluffy.

After whipping it all up, pour in the sweetened condensed milk will blending. Continue blending until it’s mixed in thoroughly.

Then add in the vanilla and lemon juice. Continue to mix until it is all melded together.

Finally you will scoop a heaping 1/4 cup of the mixture into each dessert cup.

Lastly you will scoop the blueberries into the center of each dessert cup.

You can enjoy them now or chill them and enjoy them later. Or my personal favorite….both!!

PRO TIPS

Making Graham Cracker crumbs from Graham crackers. This recipe calls for 3/4 of a cup which should take 5 to 5 1/2 crackers. You can smash them by hand or use a food processor.

Gluten free alternative to graham crackers are also available.

Another idea could be adding a dollop of cool whip or whipping cream on top before topping with blueberries as well.

Topping alternatives are limitless. Instead of blueberries you could use any other flavor of pie filling or fresh fruit, but it doesn't stop there. You could add in chocolate, butterscotch, Oreo's, and so much more!

Storing

These are unbaked so they need to stay in the refrigerator. They are best chilled anyhow. I wouldn’t prepare them more than a couple days in advance and you don’t really need to since they can be made so quickly If you are storing them for a couple days make sure to cover each bowl/dish with a plastic wrap.

This can be seriously made in 15 minutes or so and it is not only mouth-watering but it is also has a beautiful presentation when served up in glass bowls or glasses. With a graham cracker crust, sweet cream cheese filling, and topped with blueberries!!

Equipment

  • 1 Stand mixer or hand mixer
  • 2 mixing bowls
  • 8 serving bowls or glasses

Ingredients
  

  • ¾ C Graham Crackers
  • 2 Tbsp Butter melted
  • 2 Tbsp Granulated sugar
  • 8 oz Softened cream Cheese (1 package)
  • 14 oz Sweetened Condensed Milk (1 can)
  • tsp vanilla extract
  • C Lemon Juice
  • 1 can blueberries

Instructions
 

  • In a small bowl mix the graham crackers, sugar, and butter in a bowl until it is all combined.
  • Then put approx. 4 teaspoons of the mixture into 8 dessert cups, glasses.
  • I pat the graham cracker crust down into the bottom of each cup.
  • Now we mix up the filling. Start off by whipping your softened cream cheese so it's light and fluffy.
  • Now blend in the can of sweetened, condensed milk.
  • Once it's all blended together add in your vanilla and lemon juice and continue beating until it is all melded together.
  • Now scoop around ¼ cup of the mixture into each of the 8 dessert cups on top of the graham cracker crust.
  • Lastly add in your fruit. I am using a can of blueberries.
  • You can enjoy it now or chill and enjoy later, or both!!

Notes

You can use any fruit topping or your choice: fresh, canned, frozen, pie filling. 
Another idea would be crumbled Oreo cookies or something similar.
Spray some whipping cream on top if you’d like.
